Ingredients
- 500g of cherry tomatoes
- 3 red capsicums
- 1 x red onion
- 1 tbsp olive oil
- 3 garlic cloves
- 1 tsp oregano & thyme
- Salt and pepper
- 250ml of stock or homemade bone broth
- 150ml of double cream
- Handful of fresh basil
- 2 large scoops of WillPowders Collagen
- 2 large scoops of WillPowders MCT Keto Powder
Method
Step 1
Chop the peppers and add to the airfryer with all other ingredients except the cream stock and basil. Cook at 200 for 20 minutes
Step 2
Pop your roasted veg in a pan and add in the stock, cream, Collagen and MCT Keto Powder and basil.
Step 3
Season and enjoy
