Ingredients
- 200g of Spinach leaves
- 50g of Walnuts, halved, slightly broken and ideally, activated.
- 100g of Blueberries
- 2 small scoops of MCT Oil or Olive Oil
- 2 tsp of Apple Cider Vinegar
- Zest of half an Orange
- 1 tbsp of fresh Basil
- 50g of Feta Cheese, crumbled (optional, for added creaminess)
- Salt and Pepper
Method
Step 1
Make your dressing by adding your oil, vinegar, orange zest and salt and pepper to a jar - pop the lid on and shake.
Step 2
Pop your spinach, basil, blueberries, activated walnuts and feta to a bowl and dress.
