  • 1 Star Anise
  • 1 tsp of root Ginger, grated
  • 2 Spice Capsules
  • 2 large of scoops of Collagen
  • 100g of Carrots, grated
  • 1/2 Cinnamon stick
  • 600ml of Bone Broth or Coconut Milk
  • Toasted Pumpkin Seeds and chopped Fresh Mint to serve

Method

  1. Heat oil or butter in a large pan over a medium heat, and pop in your star anise and ginger
  2. Add your carrots, contents of your Spice capsules, cinnamon and stock. Simmer for 15-20 minutes.
  3. Remove your star anise and cinnamon stick and blend.
  4. Add your collagen and stir until dissolved.
  5. Serve with a sprinkling of pumpkin seeds and mint.
