Keto, High Protein Banana Bread

Ingredients

  • 2 ripe Bananas
  • 3 large Eggs
  • 2 tbsp of Vanilla Protein Powder
  • 1 tsp of Baking Powder
  • 150g of Almond Flour
  • 60ml of Maple Syrup (if you want it a little sweeter)
  • 1 tsp of Cinnamon
  • Handful of chopped Nuts (optional)
  • Handful of Dark Chocolate Chips (optional)

Method

Step 1

Preheat your oven to 175 degrees celsius

Step 2

Mash the bananas in a large mixing bowl until smooth.

Step 3

Mix the wet ingredients: Add the eggs and maple syrup (if using) to the mashed bananas. Whisk everything together until well combined.

Step 4

Add in the almond flour, baking powder and cinnamon

Step 5

Slowly fold the dry mixture into the wet ingredients until fully incorporated.

Step 6

Fold in any chopped nuts and chocolate chips if desired.

Step 7

Line a loaf tin (or your could use individual muffin cases) and decant your batter

Step 8

Bake for 35-45 minutes, depending on your oven, or until a toothpick inserted in the center comes out clean. If the top is browning too quickly, you can cover it loosely with foil and continue baking.

Step 9

Cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely.
