Collagen and Prawn Omelette

Ingredients
- 30g of wild caught Prawns, cooked and peeled.
- 1/2 Courgette, grated
- 2 organic Eggs
- A dash of Tabasco
- 1 large scoop of Collagen (Optional)
- 1 large scoop of MCT Keto Creamer (Optional)
- Salt and Pepper
- A knob of grass-fed Butter, or MCT Oil
- Freshly chopped Parsley
Method
Step 1
Dry your prawns on kitchen paper and squeeze the grated courgette to remove excess water. Mix your prawns and courgette together.
Step 2
Separate your eggs whites and whisk until stiff peaks form. Mix your yolks with the collagen, MCT Keto Creamer tabasco, salt and pepper.
Step 3
With a metal spoon, gently fold your eggs whites in with your yolk mixture.
Step 4
Melt your butter or MCT Oil in a medium sized pan that is suitable for the grill, and fry your prawn and courgette mixture for a minute or two. Add your egg mixture and cook until the the omelette sets - finish under the grill if you want.
