Ingredients
- 1 tbsp of Olive Oil or MCT Oil
- 1 small Onion, finely chopped
- 1 Garlic clove, crushed
- 1 Leek, finely sliced
- 1 Spice capsule or 1/2 tsp of Turmeric
- Salt and Pepper
- 1 small Cauliflower, divided into florets
- 50ml of Bone Broth
- 1 large scoop of Collagen
- Squeeze of Lemon
Method
Step 1
Heat your oil in a large pan and gently fry your onion, garlic and leek until soft.
Step 2
Add in the contents of a Spice capsule and cook for a further minute.
Step 3
Add the cauliflower and stir well to coat with the onion mix.
Step 4
Add your bone broth and collagen cover and cook for around 10 minutes.
Step 5
Puree with a hand blender, or mash well.
Step 6
Add a squeeze of lemon juice to serve.
